Japanese Food Lab Presents Tohoku Izakaya Night

Experience the culinary culture of Tohoku, home to the traditions featured in the BAKERU: Transforming Spirits exhibit, in a relaxed atmosphere like that of a Japanese style pub known as an “Izakaya”.

The Tohoku region is covered in snow one-third of the year, influencing the characteristics of local cuisine and creating an ideal environment to produce high-quality sake with distinct and refined taste. This evening will feature a sampling menu representing local dishes including preserved food, a common staple high in salt content to keep the body temperature warm during the cold winter, and a lineup of specially selected sake from regions home to many world-famous sake breweries.

Guest speaker Johnny Le will share about his personal experience and understanding of the Tohoku regional culture, having lived and volunteered in Yamagata Prefecture, offering guests the opportunity to ask questions and opening a conversation for others to share their experiences.

1. Appetizer sampler: Iburi Gakko (smoked pickles) cream cheese, squid and carrot, tofu with sweet miso paste
2. Iwagaki oyster
3. Beef tongue – 3 ways (grilled, sashimi, stewed in miso)
4. Japanese eggplant simmered in dashi and cold Inaniwa Udon noodles
5. Imoni (taro and meat soup)
6. Zuke Maguro bowl (tuna soaked in soup stock and soy sauce)
7. Tsukemono (red radish pickled in sweet vinegar, pickled thistle root)

*This event is not suited for vegetarians and vegans. Participants must be at least 21 years of age. This will be a communal style dining.

Guest Speaker's Profile

Johnny Le currently works for the City of Los Angeles in the Planning Department. Prior to this position, he spent a few years in Japan as he joined a volunteer organization to provide humanitarian support for the City of Ishinomaki in Miyagi Prefecture devastated by the 2011 earthquake and tsunami, and held an Assistant Language Teacher position in the City of Murayama in Yamagata Prefecture.
